Grill Bread

A South African favorite of mine, will always be grill bread (roosterkoek).  It brings back memories of going on family vacations on the way to Cape Town and stopping at all the little farm shops for one of these.  They’re great for BBQ’s or for any occasion.  This bread has a lovely charred element to it.

Ingredients

  • 2 1/2 cups all purpose flour
  • 1 package instant yeast
  • 1 tsp salt
  • 1 tbsp sugar
  • 1/4 sunflower oil
  • 1 cup warm water

Directions

In a small bowl mix the sugar, yeast and warm water together.  Let sit for 10 minutes until it foams.

In a large bowl combine the flour, salt and sugar. Add in the oil and the yeast mixture.  Mix until you have a ball of dough.  If its to sticky add more flour.

Turn the dough out on a lightly floured surface and knead for a few minutes.  Place the dough in a lightly greased bowl and cover.  Leave to rise in a dry area for 30 minutes.

Divide dough into 6 flat round bread rolls.   Place the dough on a low to medium fire or just the sides of the grill.  Grill for 15 – 20 minutes. Flipping them to get a nice brown tone.  Serve immediately.
