Green Tea Cookies (Matcha)

A good friend of mine brought me a bag of high quality matcha powder from Japan. It's a dark green, smell divine type of green tea powder I could not find here in Shanghai.

Green tea has a lot of health benefits:

it's energizing
it's antioxidant
it helps fight cancer
it increases concentration
it boots metabolism and burn calories
it is rich in fiber, chlorophyll and vitamins
it lower cholesterol
it helps to detoxify the body

This morning I woke up and went straight to the kitchen to bake a batch of these super tasty/easy/beautiful cookies. Afterwards I went to the French concession for a walk, met my friend for dinner and hand him a a few for him to try. We ate most of them while sipping our espresso on Ferguson lane

Here is the recipes!

Ingredients (makes 25 cookies):
1 whole egg
90 gr unsalted butter
100 gr sugar
180 gr. all purpose flour
1 tsp baking powder
1 tsp green tea powder (mocha powder)

In a bowl of your electric mixer place unsalted butter and sugar

Cream them until fluffy. Scrape the side of the bowl

Add the egg and beat it into the butter until incorporated then add the matcha powder

and stir until incorporated

combine flour, salt and baking powder in a bowl

and add it in 3 batches

Roll out batter into a 5 mm circle, cover it in plastic wrap and let it rest in the fridge for 1 hour.

Cut it off into discs

and bake them at 180 C in pre-heated oven for about 10-12 min. Let the cookies cool down on a wire rack before storing them.
