Grain-Free White Chocolate Chip Brownie Cookies (REPOST)

I’ve been test baking, recreating, and tastespotting a ton of grain-free cookies lately and wanted to re-share an updated version of a batch I originally shared back in 2013.  These White Chocolate Chip Double Chocolate Chip Brownie Cookies eschew grains altogether and have been and improved with the addition of white chocolate chips,  walnuts and even cranberries nin one batch. These cookies are foolproof.

Grain-Free White Chocolate Chip Brownie Cookies  (Recipe adapted from Yammie’s Glutenfreedom)

1/2 cup softened butter
1/2 cup brown sugar
1/2 cup coconut palm sugar
1 egg
2 teaspoons vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup cocoa powder
1/2 cup white chocolate chips
1/2 cup semi-sweet chocolate chips
1/2 cup walnuts

Preheat oven to 350ºF.
Mix together the butter and sugars. Add the egg and vanilla and mix until combined. Mix together the soda, salt, and cocoa and add to the wet ingredients, mixing until combined. Stir in the chocolate chips and nuts. Bake for about 10 minutes
