Grab and Go Green Smoothie Popsicles

Don't have time to make a green smoothie? Keep a stack of these Green Smoothie Popsicles in the freezer for snacking on the go, and get a good dose of fruits and vegetables at the same time.

I'm going to be very honest, and admit that I had never made a green smoothie in my life until I had to develop one for our latest ebook, The Great Big Book of Green Smoothies. When I was working on this recipe it was the height of summer, it was hot, and smoothie popsicles seemed like a great idea for the conditions. After all, who can resist a popsicle.

My initial attempts at making green smoothie popsicles were not encouraging. The Princess, ever ready with constructive criticism, told me they tasted like grass. At least she's honest. Mr Grumpy ate the grass flavoured popsicles with little complaint, whilst The Princess devoured these pineapple flavoured ones instead. I consider that a great endorsement.

I thought that The Princess would eat these for breakfast on the way to rowing, so added the cottage cheese for a decent protein boost. Apparently popsicles are not breakfast food, even when it is 25C at 5.30am, so they were eaten when she got home from school instead. Fine by me. The protein rich popsicle keeps her going until dinner, and she gets an additional serve of vegetables without even realising it.

The pineapple provides enough sweetness for us, although if you have a sweet tooth I would recommend tasting the mixture before freezing it. Flavours dull when frozen, so if the mixture is not sweet enough, blitz in some more more pineapple, or add a dash of coconut or maple syrup.

Grab and Go Green Smoothie Popsicles

  • ¼ cup cashews
  • 1 kiwi fruit, roughly chopped
  • 1 cup chopped pineapple
  • 2 cups spinach
  • 1 cup mint leaves
  • ½ cup cottage cheese or silken tofu*
  • ½ cup coconut milk
  • Juice 1 lemon
  • Juice 1 lime
  • Coconut or maple syrup (optional)
  1. Cover the cashews with boiling water and set aside.^
  2. Place the remainder of the ingredients in a food processor or blender.
  3. Drain the water from the cashews and add to the rest of the ingredients.
  4. Blend the mixture until smooth.
  5. Pour the mixture into popsicle moulds and insert popsicle sticks into each mould.
  6. Freeze for 6 hours or until firm.
  7. Enjoy at will!
