Good Morning Treat: Strawberry Bruschetta

Here’s a sweet and quick breakfast treat of strawberry bruschetta to get you ready to greet the day! You probably already have all the ingredients in your kitchen right now and the best part about this recipe in particular? It’s very low in fat and won’t mess up your diet or healthy lifestyle. See? Eating well doesn’t always have to mean eating celery sticks and drinking water.

This particular recipe will make four servings, so plan accordingly if you want to make more for a get together or just a dessert for yourself. Here’s everything that you’ll need:

  • Four slices of bread, whole wheat and sliced thick
  • 6 tablespoons of light brown sugar
  • 1 teaspoon of lemon zest, preferably grated
  • 2 teaspoons of lemon juice
  • 3 cups of strawberries, sliced
  • 4 tablespoons of Italian cream cheese (mascarpone)

And here’s how to make this delectable dessert:

  • Place bread in toaster to lightly toast them. Set aside when finished.
  • Start heating up a large skillet over high heat and begin adding in the sugar, lemon zest and juice to start cooking it by stirring for 30 seconds to one minute. Next add in the strawberries and stir once more until the strawberries or heated and the juice starts to exude through or for about another 30 seconds to one minute. Set aside when finished.
  • Take out the toast again and start spreading on the mascarpone, as much or as little as you’d like. Then top it off with the strawberry mixture and serve as is.
