Diwali Sweet preparations are on!!...Here's my new recipe of Diwali sweet ...Doodh Pedhe /Goan Doodh Peda/Milk Fudge!!

This sweet is Goa's traditional sweet, highly admired and eminent sweet!
My daughter loves these peda but since we don't get them outside Goa,I have to make her wait till we visit Goa.
This time I made sure I make them myself,rather than depending on anyone else and they tasted much better than the one's we buy.
Of course, to get fruitful results we need to put in some efforts, so to get them the way we like them, we have to spend some time next to the kitchen counter but outcome will be best!!

There are different ways to make these. Some make these with Khova,some make it with condensed Milk,but there is huge difference in taste when we make them out of milk compared to that of condensed milk or khova.

Goan Doodh Pedhe / Milk Fudge

In a non-stick pan,add milk and let it boil on medium heat initially.You can see hardly any liquidy content then add cardamom powder and ghee.This process should take around 45 minutes or even more.
Keep stirring the milk and make sure it does not burn or get stuck to pan.
After 10 to 15 minutes of boiling ,it will reduce and thicken. Add sugar to it and let it cook more.
Mix well and cook further.
After another 10 minutes it will reduce further then thicken and look lighter brown in color.
Make sure it does not burn or get stuck to bottom of pan,keep stirring.
When it leaves sides of pan and thickened, Switch off the gas.
Let it cool down.
Wait for 10 minutes to roll pedas,such that mixture has cooled down but warm enough to roll peda.
Apply ghee to your palm and pinch a small ball of the dough ,make small round ball of this dough and keep on a greased plate.
When you are done rolling all pedas,let them sit for another 5 minutes.
Again roll them between your palm,such that it should get a shape of diamond.
The trick here is to roll the peda at the center of your palm, and while rolling peda, do not apply much pressure at center of peda.
This should get you right peda shape.
Even if you can't its ok, taste is awesome.

When it has mostly reduced,reduce the flame slightly.

    Adjust sugar level as per your choice.
