Gluten Free & Vegan Lunch: {Black Bean and Veggie Burrito Bowl}.

I don’t know about you, but I struggle with lunch options that are easy, healthy, and that the kid will love. An easy option for lunch is a Black Bean and Veggie Burrito Bowl. It not only works at home, but it’s a great option for lunch at work or school… and it’s Gluten Free and Vegan! A wonderful way to eat clean on the go!! 

Makes 2 Servings.

Ingredients:

2 Cups Black Beans Cooked

1 Cup Quinoa or Brown Rice Cooked

1 Avocado Chopped

1 Large Tomato Chopped

1/4 C. Chopped Onion

1 Cup Shredded Cabbage or Lettuce

1 T. Chili Powder

Salsa

Salt to Taste

Cayenne to Taste {add if you like it spicy… I do!}

Divide ingredients between two bowls. Layer brown rice, black beans {sprinkle chili powder on top of the two}, add onion, cabbage, tomatoes, and avocado. Sprinkle with salt and cayenne. Top with salsa.  Enjoy!
