Gluten Free Menu Plan: July 28-August 3, 2013

Here we are at the helm of another sure to be busy week. The summer is indeed flying by and I am literally having a hard time keeping up. Between putting the finishing touches on my cookbook (released this Wednesday July 31st) trying my best to keep a debilitating fibro flareup at bay, and working hard on my test kitchen I am trying to keep my sanity. Every task I perform mental or physical takes energy, stamina, and focus attributes that are quickly depleted within my body. It is a constant battle every day to have a semblance of a normal existence. But I’ll save the woe is me tirade for another day as I am blessed in more ways than one. As far as my health is concerned, it is what it is. Let’s move on.

This week’s menu plan is simple and features a summertime staple: Corn. Golden ears of corn are ripe for the picking here in Upstate NY so naturally there is no shortage of corn inclusive recipes to tickle your fancy.
