Gluten Free and Dairy Free Salted Caramel and Dark Chocolate Tart

It's amazing how something as seemingly simple as a salted caramel and dark chocolate tart can take me so long to make, yet something like two flavours of freaking gluten and dairy free profiteroles took me only four hours on a Friday night! I guess it means that I've made my schedule way too busy again and I need to slow down. It's Sunday night at 10:30 pm and I've only just completed this tart and to be honest, it was not that the tart was that hard to make - these tarts are quite easy, actually - just a few layers and a few steps (crust, then salted caramel, then yummy dark chocolate ganache)...but this weekend brought with it...a lot of unexpected and sometimes unpleasant surprises and I wasn't even going to make this tart or post a recipe this week but I persevered (yay me!). The cooked crust had been waiting for me since Friday night in the fridge and I had a choice. Throw it out, or make a yummy gluten and dairy free salted caramel and dark chocolate tart for me to inhale during the week. I chose the latter (obviously).

My hectic weekend schedule therefore means that I can't cut it till tomorrow and therefore can't take pretty photos of the completed tart till then. That means that this post will go live without photos for the time being - and that the photos will be added either Monday or Tuesday night. My apologies because I know that's really what you want to see prior to trying this recipe...but I promise it's just one of those things I could not avoid and I promise to do better in future.... I also haven't tasted the tart all put together yet (since the ganache is getting nice and thick in the fridge at the moment) but I can tell you this looks scrumptious and each layer/component of this tart is miraculous on its own. I'm pretty proud of it and cannot wait for breakfast tomorrow when I can inhale a huge delicately consume a small piece of it.

I've been fascinated of the idea of salty caramel for a long time, and have never made it. In fact, I was so sure that I was going to make it and it would be absolutely disgusting. I was ridiculously happy when I tasted it. It was perfect - thank GOD! Otherwise I'd be scrambling to remember my recipe for gluten and dairy free nanaimo bars..which I may still share later on this week if I remember how to make them.

As children, and even now, if we were given a box of those filled chocolates for Christmas or a special occasion (or just everyday *hint hint*), my sister and I would hunt for the caramel ones, and try to score them before anyone else. It usually meant a lot of open chocolate boxes with two little square ones missing from each (yeah, the caramel are usually square...). The chocolate caramel flavour combination is just a family favourite - so for chocolate week on the GBBO, what else could I make? It's in my blood I tell you! ... er not the chocolate and caramel...just the love for them. Okay, I will admit, there's a certain chocolate and pistachio galette that I've been wanting to try...but this took preference...although I did steal the crust from the galette for this pie. Anyhoo...speaking of stealing - let this easy little recipe steal your heart....
