Sometimes it seems like yesterday I held Tiffany in my arms for the very first time. Last weekend she had her first play-date. No, I didn't cry, although I had tears in my eyes. By baby girl is growing. Soon (I hope not) I'm going to tell you she's having her first crush. Since it was a last minute thing and didn't had much time on hand to prepare something I decided to make some granola bars. It was the third time I was making them and realized I have never talked about them on my blog and took a couple of photos to share with you guys. First time I made them I used a combo of cashews and golden raisins. They were good, but, to be honest cashew is not out favorite nut. Second time I used a combo of walnuts and dried apricots. Hubby doesn't eat walnuts so I had to share the whole pan with Tiffany, what a week that was. I think I'm going to make that mistake more often.Now I used slivered almonds and dried cranberries. We all agreed that this one was the best combo so far.
These bars are pretty easy to make. It goes like this. Preheat the oven to 350F. In a bowl mix the dry ingredients : rolled oats, flax meal, crystallized ginger, nuts and dried fruits.In a small saucepan over medium-low heat, melt butter, sugar and honey together. Stir until sugar is dissolved. Add the wet mixture to the dry mixture and stir to combine. Spread mixture evenly in the baking pan.Bake for 25-30 minutes.
