Ghostly Lasagna

There’s nothing like a plain ol’ log of fresh mozzarella cheese to liven up an old favorite recipe for Halloween! Given it finally seems like Fall and the weather has turned “cooler” in only a way that it can in SoCal, I’ve been having more cravings for heartier and richer foods. My craving for lasagna was a good opportunity to add a little Halloween spookiness to our meal.

Fortunately for me, it seems as though almost every day Bebe asks me if we can have a Halloween party at dinner that night. And I don’t say that sarcastically. I love this holiday!

This lasagna is pure comfort food. My Mom’s recipe that I posted back in 2010 can be found on my blog here. The only updates I made to the recipe you see above are: 1) use ground turkey instead of beef; 2) add chopped lacinato (dinosaur) kale to the meat sauce; and 3) top the loveley lasagna with mozzarella shaped like ghosts with olives as eyes.

What can I say, easy peasy spooky fun, and this was highly entertaining for Bebe!
