Fruity Chocolate Squares

These little cakes are light and fruity! The will make a great eleven am coffee and cake treat or paired up with an afternoon cuppa tea. You  can actually freeze these Fruity Chocolate Squares for use in later weeks or months. My husband and parents love a bit of fruit loaf so its nice to make a batch and store half in the freezer to take in a few weeks to ration the cake consumption!

You could add any dried fruit into these light bars such as apricots, sultanas, craisins and even dates. The addition of a hint of chocolate definitely adds a little more naughtiness to the cakes.

This light cake has hidden prunes in it, I say hidden as some people will turn their noses up at the laxative compound within the prunes. Now let’s be clear the few prunes that go into this cake will definitely not make you going running, however prunes are known for the high antioxidant content which is a great plus point. To get a proper laxative or constipation remedy you would need to eat at least 300g to even get a remote effect. 

Ingredients
125g Margarine
125g Caster Sugar
2 eggs
2 tbsp milk
150g self-raising flour
10g dried mango
70g glacé cherries
25g prunes
25g Plain chocolate chips

In a large mixing bowl add the margarine and caster sugar

Beat the margarine and caster sugar together until pale and creamy, usually about a minute or 2 on medium speed.

Add the eggs and milk to the mixing bowl and beat for another 1 minute on medium speed.

Add the self-raising flour until the mixing bowl and mixture until the flour is blended in.Add dropped dried mango, quartered glace cherries, roughly chopped prunes and chocolate chips into the mixing bowl

Mix the batter for another 20-30 seconds on medium speed.

Lightly grease and flour a baking tin and pour in and level the cake batter.

Bake the cake loaf for 35 minutes at 170c until baked and golden brown.

Slice the cake into small squares and enjoy!
