Fruit Cake / Plum Cake

Firstly,make the fruit base.
In a bowl add the brown sugar and melt it on medium heat.
When it melts reduce the heat and add water.
It will bubble up so be careful.
Now,bring the heat back to medium.
The sugar will start to loosen slowly.
Now,add the powdered spices,all dry fruits,ginger powder.
Cook for 5 to 7 minutes.
Let it cool and refrigerate it for a day.
I refrigerated it for 1 week.
On the day when you will make the cake,grind the fruit mixture to a coarse puree.
Do not add anything extra to grind it.
Preheat the oven at 350 F / 180 C.
Next for the cake,in a mixing bowl sieve twice maida,salt,baking powder,cornstarch.
In another bowl,add the ground fruit puree,add the butter,oil,ghee.
Mix well.
I used a the regular hand whisker/egg beater to do this.
You can use hand mixer or mixer with paddle attachment too.
Break eggs and add one at each time.
Add cocoa powder.
Mix well ,so that all the ingredients are well mixed.
Now to this add the flour mixture in batches till all the flour is consumed.
Line the baking pan with parchment paper.
I used 9" loaf pan.
Pour the cake batter in the pan.
Tap once or twice on the kitchen counter to release air bubbles.
Now tent this pan with aluminum paper.
Bake it for 40 minutes.
Then remove the tent and bake for another 20 minutes or till done and toothpick test is done.
Let it cool completely.
Invert on the cooling rack.
Slice the cake and enjoy this cake during Christmas!
