I know you are waiting on the edge of your seat to see what I did with all of those colorful vegetables. Well, I kept it simple. Simple and delicious.
A Caprese salad – tomatoes, mozzarella, fresh basil, olive oil, balsamic vinegar, salt and pepper.
The rest of the vegetables, I just roasted in the oven. I added olive oil, salt, pepper, and fresh rosemary.
So good.
