Five Things for Friday

So much to love lately! Here’s the shortlist: (And yes, I’ve had my daily dose-and-a-half of kraut. Have you?)

1. Tofu scrambles. I’m starting to feel pretty confident whipping these up for a let’s-be-fancy breakfast on a whim! This baby had portobello and spinach, with a healthy dose of freshly ground turmeric for that beautiful yellow hue. On the side, some toasted sourdough bread (this was my third try with a new recipe) and raspberries.

2. Zen Palate! B and I went for dinner recently and had a lovely time. We tried a new-to-us appetizer, zenmaki, which was filled with asparagus, carrot and soy “ham,” and crusted with sesame. I loved everything except the faux meat… I’ve had a craving for maki rolls lately!

B ordered the garden delight, which was a bed of romaine topped with delicious grilled vegetables and brown rice. He was nice enough to spare a few .

I was boring and went with my usual south by southeast: beans and hearty soy croquettes served with a light and spicy vietnamese-style lemongrass sauce with basil moo shu roll & blanched veggies. The rice is seasoned with warm spices like nutmeg and cumin, and the croquettes are served warm and lightly fried. Delish!

3. Ripe bananas! You know what that means…

Banana bread! I made this recipe for oatmeal banana bread, and substituted dried blueberries and walnuts for the fillings. Nom nom nom! Nothing spells c-o-z-y like the smell of baking bread.

4. Willing dining companions. I’m lucky to have family and friends who are willing to eat different cuisines, and I do my best to return the favor. My mom and I had dinner at Ozu which, like Zen Palate, is becoming one of my favorite go-to places for a hearty vegan meal. We shared an order of summer rolls to start; they were filled with tofu and mint and came with peanut dipping sauce.

For my entrée, I took the simple route and ordered the macro plate with steamed root vegetables (carrot and kobucha squash), hijiki, chick peas, steamed kale, and brown rice.

For dessert, we shared a slice of chocolate tofu pie; it was good, but not great. But it was chocolate!
