Filled Sugar Cookies

Filled cookies with nerds and mini chocolate chips are great treats for kids and grown ups. You can fill the cookies with pretty anything, such as raisins, nuts, small sweets and chocolate.

When you bite into these cookies, you are not expecting a surprise inside. They are so easy to make give it a try and tell me about your creations.

Ingredients
200g Butter
280g Caster Sugar
1/2 Tsp Mixed Fruit Flavouring
1 Egg
400g Plain Flour
Pinch of Salt
1/2 Tsp Cream of Tartar
Icing sugar
Food Colouring

Cream together butter and sugar

Add egg and flavouring and beat

Add flour, cream of tartar and salt to the dough.

Mix the dough well.

Make a ball on a floured surface and start to roll out.

Roll out the cookie dough to about 3mm thick and cut out 3 circles per cookie, cutting a smaller one inside one of the cookie cut outs, place on to a baking tray and baked at 170c for 8-10 minutes until lightly golden.

Once cool, mix together icing sugar, water and food colouring to make some icing, then pipe around one of the cookies

Place the cookie right on top

Fill the middle with mini chocolate chips, nerds or anything other small sweets or chocolate.

Pipe more Icing around the edge

Place the remaining cookie on the top, decorate the top and allow to the icing to set! Enjoy
