Ingredients
- 12 -ounce cut skinless wild Salmon fillet
- Freshly ground Pepper
- 1/4 cup chopped mixed Herbs
- Juice of 1/2 Lemon
- Kosher Salt
- 12 ounces Fettuccine
- 8 ounces cut snap Peas
- 4 tbsp unsalted Butter
- 1 sliced Shallot
How to make Fettuccine with Salmon and Snap Peas
Step 1: Boil the salted water, then add pasta and cook according to packet directions. Step 2: Add snap peas during the last 2 minutes of cooking, then drain, but reserve 1 cup of the cooking water. Step 3: Meanwhile, heat 2 tbsp butter in a skillet, then add shallot and cook while stirring, until slightly softened. Step 4: Add salmon, salt and pepper, then cook until the salmon is just cooked through. Step 5: Add pasta and snap peas with 1/2 cup of the reserved pasta cooking water, 2 tbsp butter, herbs and lemon juice. Step 6: Cook while tossing and adding more of the reserved cooking water until the pasta is coated. Step 7: Finally, season with salt and pepper and top with the salmon.MORE RECIPES
