I somehow miss posting my lunch menu here on a regular basis.I am always attracted towards posting recipes for new dish I make and giving the snapshot of the brunch I prepare takes a non intentional backseat.Today while I was going through the pics I realized I didn't post this brunch I prepared a while back.So here it is :). The platter consists of chapathi,restaurant style vegetable pulao,aloo methi,mixed vegetable raita,strawberry milkshake and fresh mangoes.A simple yet totally blissful brunch it was. This was a simple spread so it took me about 50 minutes for me to serve this meal,lets dig in :)

Chapathi
Restaurant style vegetable pulao
Aloo methi
Mixed vegetable raita in the same lines of cucumber raita
Vadu mangai pickle
Strawberry milkshake- I did not add almonds this time,just strawberry and milk
Cubed mango
The total time for cooking is 50-60 minutes.
1.Make the chapathi dough and keep for resting (15 minutes)
2.Prepare strawberry milkshake and refrigerate (10 minutes)
2.Pressure cook rice and potato separately (15 minutes)
3.While rice is getting cooked,wash and chop the veggies for pulao,cut onion for raita and pulao,wash methi leaves,cut the mangoes and refrigerate. (15 minutes if done fast)
4.Once the pressure is released,allow the rice to cool for 20 minutes.Prepare chapathi and aloo methi in both the stoves during that time.
Note: This comes by practice.I generally prepare 8-10 chapatis for a meal and it takes no more than 15 minutes for me.
- Use a cast iron tava,it retains the hear for long time even in lo flame,so that you can concentrate on the other dish also side by side.
- Investing in a couple of good skillets will really speed up the cooking.
6.Serve the brunch along with pickle.
Notes:
1.Quick cooking is not a rocket science.All it needs is some practice and skill and you can master it in no time
2.Here in this menu,you can change the milkshake if strawberries are not in season.Mango milkshake,thandai or badam kheer will fit here.
3.Instead of raita you can make any salad and prepare mango lassi instead.
4.Instead of aloo methi aloo jeera will also be good here.
