Energy Bites

Have you heard about the protein ball hype? I definitely did but they somehow didn´t really attract my attention to make them myself at first… just until I got to try them in Vienna´s Freiraum Deli. I was absolutely excited about those little energy treats which are really delicious and healthy on top!! They are very variable, on the base they consist of rolled oats, then you can add peanut butter, honey, maple syrup (vegan variation) or dates to bind the mass. In addition you can add nuts, coconut flakes, dried fruit as raisins, cranberries, dried apricots,… And last but not least for the sweet tooth..how does chocolate chips sound? I kept my recipe pretty simple consisting of only 5 ingredients, since I wanted them to be a light treat for any time to snack on! ; )

Ingredients (make 12 energy bites)

  • 2 tbs. peanut butter
  • 1 cup of rolled oats
  • 2 tbs. honey
  • 3/4 cups grated coconut
  • a handful rasisins, cranberries

Combine all ingredients in a medium sized bowl and use your fingers t form balls. Set ready formed balls on parchment paper and serve or store in fridge or glass up to a week.
