Apparently there is the biggest Elvis exhibition to ever hit London on at the O2 coming up in December. At least they claim it is - but I saw the ad in the tube when I was dragging my Mom around London this week ... under apparent rioting but that's another story. Anyway, I was trying to figure out what to do with this awesome organic raw banana powder that was sent to me by Indigo Herbs - and then it hit me...Elvis' favourite snack (supposedly) was peanut butter and banana sandwiches....and of course, why not throw some chocolate in there? And that was what led to these gluten free and dairy free Elvis cookies!

I am fascinated by this stuff...and if you google - the only recipes you seem to be able to find are for smoothies and porridge (?!?!). I was completely disappointed...where's the creativity? I HAD to find something else to do with it...Okay, the truth is I was trying to make Elvis macarons and not thinking as clearly as I perhaps should have - but don't you love when things work out better than expected? Now if you remember, when I was doing making my gluten and dairy free biscotti, some of my fellow bloggers and I completely went nuts in a conversation about what the difference between a cookie and a biscuit was (for a quick summary, click on the previous link). This, I promise, is definitely a cookie....an Elvis cookie! And to make it even better, it was immediately Mommy approved. And she is not a peanut butter fan, or a fan of things that are too sweet. She even suggested I not put this on my blog but put it in a cookbook. So that made it all worth it - and is the perfect reason for you to try this.

Of course, like all the other recipes on the blog, these Elvis cookies are gluten and dairy free!.... and this one only takes a few minutes to put together!
