Eggless Ragi Chocolate Whole Wheat Cake -Baking

Sometimes a little knowledge of chemistry is very helpful. ..
The basic chemical reaction that you learn in high school can make your dense cakes LiGhTEr...... not levitate light ,just light.
Sweet child's grade 10 chemistry says that ....
Acid +Base =Salt +Hydrogen gas(Bubbles) and hence light texture.

So bear with me while I take you on a Dense ,heavy whole wheat whole grain Finger Millet ie Ragi cake made egg less and chocolate. And because of our diet control ...low fat.
And light...very unlike a whole flour cake.

With out much ado...
for the
Eggless Ragi Chocolate Whole Wheat Cake -Baking...
you need
1 cup whole wheat flour or atta
1/2 cup Ragi flour or Nachni(finger millet)
1 cup (less 1-2 tbsp)yogurt fresh or sour-you need approx 220 mils of yogurt
2 tsp Apple Cider vinegar or plain vinegar
2 tbsp cocoa powder
1 tsp bicarbonate of soda or baking soda
1 pinch salt
3/4 cup ground sugar
1/4 cup vegetable oil, I used Canola
1/3 cup milk
2 tsp vanilla extract or essence
All you need is to sift the dry ingredients together
Just don't add the vinegar just yet.
Whisk the wet stuff together.
That is the full 200 gms yogurt cup plus more...
 Grease and flour the round cake tin well. Use Whole wheat flour to flour the tin.
Heat the oven to 180 °C .
Into the dry ingredients pour in the wet and whisk together. Now add in the vinegar. The batter will not be runny, and will seem to be too less for the cake tin.
Just even out the batter by tilting the pan and pop into the oven.
30 minutes and checking. ..
Mine took 35 minutes.
You should see the cake shrink away from the sides. A couple of cracks will have appeared on the surface, just check with a skewer to see if it is done.
Bring it out and cool for 10 minutes.  Run a knife around the cake and turn out onto wire rack.
Perfect bottom...
Cool and slice.
You can also slit the cake and ganache it to make it more irresistible, but you will be tripling the calories.
I believe in sharing the calories,but unfortunately, I haven't yet found people willing to take on more calories. So we skipped the ganache.
 Truth be told, there wasn't much left to ganache.
So...

Sometimes, the cake finishes before it gets photographed.
That is a good indicator isn't it?
This cake is light,with a super velvety crumb, deep intense chocolate flavor and absolutely no clue that it is related to whole grains and health from anywhere.
A total master disguise.
I need to tell you the story where I fed my boys Lauki(bottle gourd) paranthas telling them it was Mooli(raddish)...
