Eggless Apple Pancake

As some of you visiting this blog for a while know,I am on a constant look out for recipes that are healthy and as well as tasty for a toddler to enjoy.My daughter is a growing toddler who's taste buds seem to change ridiculously fast :)Though I pretty much feed her the food I cook every day (No special cooking for her),getting her to eat some thing solid during the afternoons is quite a task.Pancake has been in mind for quite a while now and I wanted to prepare it using wheat flour.I found this recipe in a magazine and I made few changes to avoid egg and maida and tried these out.The pancakes turned out really tasty and fluffy.My daughter and I enjoyed it hot :)Try and let me know :)
Egg less apple pancakes
Star ingredients:wheat flour+apple
Time:30 minutes
Yield:10 pancakes
Ingredients:
3/4 cup whole wheat flour
1/2 apple peeled and grated
3 teaspoons sweetened condensed milk
3/4 cup milk
Cardamom or vanilla
1 teaspoon sugar
1/2 teaspoon baking powder
A pinch of salt
Method:
1.Sift wheat flour along with baking powder and salt.To that add condensed milk,sugar and cardamom/vanilla.Add the milk slowly.
2.Whisk together to form a smooth batter without any lumps
3.Add the grated apples to the batter.
4.Mix gently for 2-3 minutes
5.Heat a tava and spread the batter as thick pancakes.
6.Cook from both sides till they are golden.
7.Serve with honey/sugar dusting or as such.
Notes:
1.Condensed milk is used to replace egg here.You can even use thick curd.
2.I used a very small amount of ghee while cooking
3.Fruits like banana,papaya can also be used.
4.These pancakes will be darker as wheat flour is used
