Egg, Ham and Cheese Breakfast Sandwiches

One of his favorite things to eat are breakfast sandwiches because they are filling, easy to make and even better, to take on the go. Zach loves grabbing these out of the freezer on his way to work, going fishing with his Dad or just to take with him on the go.
If you've watched on my Insta Stories, I've shared how I made this recipe but a few of you have asked for the recipe so I wanted to share it here with all of you! I usually make these on Sunday and freeze them all for the week. They are such a life savor for busy mornings! Just heat them up in the microwave for about 30 seconds when you're ready to eat!

Directions:
  • 12 whole wheat English muffins split
  • 1 dozen eggs
  • salt and pepper to taste
  • 12 slices ham thickly sliced
  • 12 slices sharp cheddar

Ingredients:
  1. Pre-heat convection oven to 350 degrees and spray a ramekin with cooking spray.
  2. Crack one egg into each ramekin and sprinkle with salt and pepper. For even baking, gently break the yolk using a fork or knife.
  3. Bake eggs until egg whites are firm, 18-20 minutes.
  4. While eggs are baking, begin assembling the sandwiches by placing the bottoms of each English muffin on a flat surface. Top each bottom half with one slice of cheese and once slice of ham.
  5. Place one egg on top of the ham and cheese half then top with the second half of the English muffin.
  6. For easy microwave reheating, wrap each sandwich individually in parchment paper then place in a resealable plastic bag to freeze. To reheat, simply place in the microwave for 60 seconds on full power or 30 seconds to a minute on 50% power.
