When my best friend came to visit me a few months ago she brought the most amazing cookies to my house… They were meant mostly for her because she has Celiac, and she is very sensitive to gluten. Well I probably ate over half of her batch… luckily she made double because she knows me :)
The secret to her healthy amazing cookie? Quinoa flakes instead of flour. I have been cooking with quinoa for the past few years but I had never heard of the flakes she spoke of. I recently found them and wanted to make some pumpkin cookies. Well the recipe on the Ancient Harvest quinoa flakes website was for crispy cookies and I love chewy fluffy cookies. Needless to say I had a very difficult time finding a recipe for the cookies I so perfectly imagined in my head.
So I created my own!
I was a bit nervous at first because I usually put eggs and flour in all of my cookie recipes. But these cookies turned out perfect. I absolutely love the trail mix cookies at Trader Joes, and these cookies are like a healthier Fall version of those!
I love baking anytime, especially around the holidays, and now my daughter is entertained by mixing the ingredients so it’s a win win.

Easy Chewy Quinoa Flake Pumpkin Cookie Recipe
Preheat oven to 350
What You Will Need:
1 1/2 Cups Ancient Harvest Quinoa Flakes
1 C. Certified Gluten Free Oats
1/2 Gluten Free Oat Flour {to make your own put oats in food processor until a powder}
1/4 C. Ground Flax Seed
1/4 C. Coconut Oil
3/4 C. Organic Pumpkin
1 C. Raw Brown Sugar or Agave {if using brown sugar to sweeten add 2 T. of agave to bind the cookie together}
1/4 Applesauce
1 t. Ground Cloves
1 t. Ground Nutmeg
1 T. Cinnamon
Salt {optional}
1 t. baking soda
Optional
1/4 C. Dried Cranberries or Raisins
1/4 C. Nuts of your choice… I used pecans…. sometimes use raw sunflower seeds, or walnuts
1/4 C. Toasted Unsweetened Coconut
1/4 C. Chocolate Chips
Mix the dry ingredients together and then add remaining ingredients. Add the optional mix ins if you would like. For the cookies pictured I added cranberries, pecans, and chocolate chips, and they turned out amazing!
Spoon onto cookie sheet and bake at 350 until golden {for 14-18 min depending on your oven.}
