Happy Saturday Everyone! The sun is shining and it is a beautiful Summer day here on the East Coast. Our Fourth was spent with family in Maine. The weather did not cooperate, but we had a wonderful time nonetheless. Maine had been on my bucket list for quite some time. I finally got the photo of an East Coast lighthouse I have always wanted… I will post it soon! I promise! Well after eating bowls of Creamy Clam Chowder, and Lobsta for days…. it’s back to cleaning up our eating. This recipe is perfect for that! These stuffed peppers are packed with protein and veggies, and they are kid and husband approved!!!
Easy Ground Turkey Veggie Stuffed Peppers
1 pound ground turkey
1/2 chopped onion
1 can black beans 14.5 oz
1 can chopped tomatoes 14.5 oz
2 cups cooked quinoa or brown rice
1 can green chilis 4 oz
1 packet taco seasoning
Salt pepper to taste
4 large red bell peppers
Cooking Spray or Oil
Cilantro for Garnish
Cook ground turkey until almost browned, add onions, sauté until transparent and meat is thoroughly browned. While browning the turkey, heat oven to 400. Slice a t shape in the peppers, coat with cooking spray {I use Trader Joes Coconut Oil Spray}. Roast for 30 minutes in pre-heated oven turning the peppers half way, {for a faster option try these roasting methods instead}. While peppers are cooking, in large bowl combine browned turkey with remaining ingredients, stir well. When peppers are done, let them cool until you are able to handle them comfortably, de-seed the peppers and then stuff each half with filling. Place in glass baking dish at 400 degree oven for 10-15 minutes. Sprinkle with cilantro or cheese!
