Fall is here, school is back in and the holidays are around the corner. With all this madness, it's time to make use of easy dinner options. My family and I are so busy with work and after-school activities that's it's hard to find time to cook but I find the time. Honestly, my slow cooker is my best friend, especially when it comes to cooking pork. Pork dishes are very common in Hispanic homes, especially when I was growing up. I know many different ways of making a delicious lechon asado (roast pork) but the easiest will always be in my slow cooker and with a special ingredient, Coca-Cola™.
Yup, you read that correctly, Coca-Cola, specifically a 12oz bottle of Coke de Mexico. This Coca-Cola is a little sweeter than regular Coke and is the perfect marinade for meats, especially roast pork! The pairings are endless. Taste the feeling.
Easy Slow Cooker Roast PorkServes 6
Ingredients:1 4lb Pork tenderloin1 medium yellow onion, chopped2 tsp garlic powdersalt and pepper to taste1/2 tsp ground cumin1 12-oz bottle of Coke de Mexico
Add onions to slow cooker.
This was the 4 lb pork tenderloin I used for this recipe. It comes in two pieces. I usually cook both pieces at the same time, use one for one meal and then the other for left overs the next day for lunches.
Place pork tenderloin on top of the onions and season with garlic powder, salt, pepper and ground cumin.
Then pour 1 bottle of Coke de Mexico around the pork loin. Don't pour too much on top of the pork loin because you don't want all the seasoning to come off.
Cover and cook on high for 4 hours or on low for 8 hours.
I promise you that this will be the most tender pork loin you have ever made. Once it has finished cooking, shred the pork loin with two forks and allow it to sit in the slow cooker another 15 minutes.
My kid's favorite dish with this roast pork are roast pork and black bean tacos. This is the easiest recipe ever. All you need are warmed tortillas, warmed up can of beans and the shredded pork.
Like I mentioned before, the pairings are endless. I serve this roast pork in classic Cuban fashion, with white rice and black beans. I use it in BBQ pulled pork sandwiches and in empanadas. So many delicious ways to enjoy it but always make sure to pair your dish with an ice-cold refreshing Coca-Cola!!
