I've focused on not only bringing you Valentine's posts & recipes, but also tried to offer easy versions of everything! That way anyone can find the time to celebrate this holiday.
This recipe is no exception (:
I don't know if you knew this, but yesterday was Pancake Day!! It is always the Tuesday before Lent starts. It dates back a few centuries ago when people would try and use up all their fattening ingredients before they started fasting. Most people made pancakes for at least one of the meals that day. Now this holiday is celebrated all over the world!
Pancake Day + Valentine's Day = Red Velvet Pancakes
These are so easy!
I used the other 1/2 of the Red Velvet Cake mix from my Homemade Red Velvet Ice Cream.
Easy Red Velvet Pancakes
12 pancakesPancakes2 cups red velvet cake mix1 egg2 tbsp vegetable/canola oil1 cup milk
Cream Cheese Syrup1/4 cup butter2oz 1/3 less fat cream cheese1/2 cup powdered sugar, sifted1/2 tsp vanilla extract1-3 tbsp of milk
1// Heat a skillet over medium low heat. In a bowl, mix together the red velvet cake mix, egg, oil & 1 cup milk. Stir well.
2// Spray the skillet with cooking spray. Pour circles of 1-3 tbsp of batter into the skillet. After 2-3 minutes, flip the pancakes. Cook for another 2-3 minutes.
3// In a microwave safe bowl, warm the butter & cream cheese until melted. Stir in the sifted powdered sugar and vanilla. Add 1-3 tbsp of milk, until the syrup is at your desired consistency.
