I’ve been posting daily on my 21 days of gratitude challenge and have been neglecting the health foodie posts a bit!
So, here’s my super easy recipe for hand-chopped “pesto” for those days that you want something fresh and delicious for over chicken, shrimp or pasta and only have a few minutes, or lack ingredients like parmesan and pine nuts!

Ingredients:
1 handful fresh basil
1 clove fresh, raw garlic
3-ish Tablespoons organic extra-virgin olive oil
few pinches of real salt
- Give the basil a rough chop with a knife or kitchen shears & toss in a small mixing bowl.
- Grate in the garlic clove (or give it a fine chop)
- Pour in Olive Oil
- Sprinkle in salt
- “Muddle” together using the handle of a wooden spoon to release all of those wonderful flavors.
Muddle is just a fancy term for “smoosh” or “squish” or “smash the crap out of…”
You can add a splash of balsamic vinaigrette for a fresh, spicy salad dressing.
