Easy Chewy Vegan Chocolate Chip Cookies

I am madly in love with Chewy Chocolate Chip Cookies.

But what do I love even more?

The dough.

And since these cookies are vegan... you can mow down on the dough and it never even has to make it to the oven.

Or you can bake them into OOOEEY GOOOEEY Goodness.

You choose.

But the awesome part, is that you have a choice. These cookies are the perfect balance of salty and chocolatey... with the perfect chewy center. And they don't have any strange Vegan ingredients that you won't have on hand.

Seriously pure awesomeness. Just wait you'll see.

Oh and did I mention, I ate half the batch with my morning coffee.

Easy Chewy Vegan Chocolate Chip Cookies

Ingredients:

1/2 C. Earth Balance Butter room temperature

2 Large Flax Eggs {2 Tablespoons of Ground Flax Combined with 4 Tablespoons water}

2/3 C. Raw Sugar

1 T. Vanilla

1 t. Sea Salt

1 t. Baking Powder {make sure its Vegan}

1 1/3 C. All Purpose Flour

2/3 C. Enjoy Life Vegan Chocolate Chips

Directions:

Preheat oven to 350. Grease cookie sheet or use silpat mat. If you have never baked with a silpat mat.... they are amazing!

Combine butter, sugar, vanilla and flax eggs together. Mix in salt, baking powder, and flour until well combined. Slowly mix in chocolate chips.

Spoon onto baking sheet. Bake for 8-10 minutes in 350 degree oven. In order to keep the cookies chewy they will not brown on top. Let cool. Store in airtight container for optimum freshness.
