Easter Coconut Cupcakes

I asked on Twitter this week about what kind of coconut is used for coconut cupcakes. A few people responded that they use unsweetened shredded coconut in the batter, and use coconut flakes for the cupcake frosting. The great thing about the texture of coconut flakes is that it looks like snow for winter cupcakes, and looks like grass for Easter cupcakes.
