Doodhi/Lauki Ki Kheer


Main Ingredients: Milk, Condense milk and bottle gourd

Serving: 4 

Ingredients:

  • 2 cups grated bottle gourd (Doodhi / Lauki)
  • 1 tablespoon clarified butter (ghee)
  • Sugar to taste
  • ½ cup condense milk
  • 4 tablespoon desiccated coconut (nariyal bura)
  • 500 ml milk
  • 1/4 teaspoon cardamom powder
  • 1/4 cup sliced dry fruits (almonds, Raisins, Cashews, Pistachio) 

Preparation: 

  • Squeeze grated bottle gourd/Lauki to remove water.

Method 1: 

  1. Heat ghee in frying pan on medium high heat as it melts, add the bottle gourd and stir-fry for about 4-5 minutes.
  2. Add milk, condense milk, and cover and cook on a simmer for 5-10 minutes until the milk is creamy and make sure you stir the kheer often to ensure the milk does not burn in the bottom of the pan.
  3. Reduce the heat to medium and add the sugar, coconut powder, dry fruits and cardamom powder.
  4. Cook for another about 2-3 minutes and turn off the heat.
  5. Kheer is ready this can be served warm, at room temperature or cold.

Method 2 :

  1. Combine the bottle gourd, condense milk, coconut and milk in a pan and simmer for 10 to 15 minutes till the bottle gourd is cooked.
  2. Add the sugar, cardamom powder and dry fruits mix well and cook till the sugar dissolves.
  3. Kheer is ready this can be served warm, at room temperature or chilled.
