Diabetic Key Lime Pie

Hi Stars! Yesterday, I made a Diabetic Key Lime Pie for someone special in my life. Sometimes it is difficult to buy someone a gift, because you run out of options … I usually purchase gift cards. However, I figured what better way to show I care than making something!

List of things you will need:

1. 1 package (.3 ounces) sugar-free lime gelatin

2. 2 cartons (5-6 ounces each) Yoplait 100 Greek Key Lime Flavor Yogurt (Any Key Lime Yogurt will do)

3. 1 carton (8 ounces) frozen fat-free whipped topping

4. 1 reduced-fat graham cracker crust (8 inches)

5.1/4 cup boiling water

Toppings:

1. 1 fat-free dairy whipped topping

2. 1 small bag of sliced almonds

3. 1 kiwi

Step 1: In a large bowl, dissolve gelatin with the 1/4 cup of boiling water and whisk.

Step 2: Combine the gelatin with the Yoplait Greek Yogurt.

Step 3: Gently fold in the tub of cool whip.

Step 4: When it is all combined, pour it into the pie crust.

Step 5: Cover and refrigerate for a minimum of 2 hours. (I flipped the plastic cover from the cracker crust. It makes a dome.)

Add toppings to your liking – I used whipped topping to decorate the edges and added sliced almonds on top. Then, I peeled and cut the kiwi into slices and placed them in the center of the pie.

Who says you can’t enjoy a delicious dessert if you’re diabetic?
