Del is where we started off with Burrata Cheese sprinkled with Dehydrated Red Tomato Powder on a bed of beetroot puree. Burrata cheese is different from mozzarella cheese as this takes the mozzarella a step further. It is mozzarella cheese formed into a pouch and filled with soft, stringy curd and cream which oozes out on being cut. The beetroot puree which, on appearance, I assumed to be sweet, was actually quite tart (almost like a tamarind chutney) and really complimented the burrata perfectly. A simple and delicate dish which plays around with flavours. I can come back to this dish any time.
Tortellini stuffed with goat cheese, sun dried tomatoes and asparagus, tossed in burnt butter with Parmesan shavings, pine nuts and raisins – the flavor of the goat cheese coupled with burnt butter was really good with the tortellini done al dante.
Tuna Salad – black pepper crusted tuna (Carpaccio style) burnt potato and onion, Kalamata olives and quail egg. A downer for me was that I got an olive pit in my salad and it was bit under seasoned.
Cottage Cheese Sholay with garlic chutney and pickled onion – the cottage cheese was soft and well cooked but maybe some other sauce would go better with it. The garlic chutney was too strong and over powered the delicate flavor of the cottage cheese.
Quinoa Biryani with Blueberry Raita – the quinoa was cooked along with the vegetables. It was not as mushy as I thought it would be, served with a smoothie like sweet blueberry raita it is an interesting take on the comparatively healthy dish.
Yin Yang – hot prawns were served on a bed of cold squash puree with cold asparagus. I enjoyed the prawn quality but the squash puree did nothing much to either enhance the flavor of the prawns or the palate. Maybe it needs a puree to uplift its flavor without dominating it.
The desserts are good and for the price and the proximity to the airport, Del at Roseate house is a definitely a good meeting and a new dining option. Don’t miss the beautiful sashimi platter – it is the art on the plate.
