Dates Cake-egg Less

I have been baking a lot these days.Every time I send in something to the oven I am excited as I was when I baked first,to test and taste the outcome.I have been avidly collecting recipes for cakes and cookies for future baking.Sometimes I come across interesting cake recipes but they contain eggs.In those cases,I try to replace eggs with some other ingredients as best to my knowledge.Of all the substitutes I have used condensed milk seem to work wonders as an egg re placer.I am yet to try flax egg or artificial re placers.Next I always prefer to use butter in my cakes instead of oil because some how I always feel an oily aftertaste with cakes using oil.With all these said,by now you should be knowing that,the cake I am presenting here contains all my favorite ingredients and the amazing flavor of this cake comes from dates :). I got this recipe from some old issue of Femina and I made some changes and the baked cake was really good.This is one more addition to my type of cakes-cakes using real fruits for taste and flavors :)
Dates cake-egg less
Star ingredients:Dried dates
Time:30 minutes
Yield: 8 wedges
Ingredients:
150 grams all purpose flour
10 dried dates
3 tablespoons sweetened condensed milk
50 grams molten butter
1/2 cup milk
3 teaspoons sugar
Vanilla/cinnamon/cardamom for flavor
1 1/2 teaspoons baking powder
A pinch of salt
Method:
1.Soak dates in warm water for 2 hours and grind to a fine puree.
2.Combine molten butter,sugar,condensed milk and milk.Whisk the mixture well till the sugar is dissolved and becomes creamy.
3.Now add the dates puree and mix well.
4.Sift all purpose flour,baking powder and salt to this wet mixture and mix well.Start whisking and beat well until the batter comes to ribbon consistency.
5.Preheat oven at 200C.Prepare a cake tin by greasing and dusting.Pour the batter and tap all the sides to ensure even spreading of the batter.
6.Bake for about20-25 minutes.Allow the cake to cool before slicing (though the warm cake tastes like heaven :)) and serve.
Notes:
1.I did not use any flavoring in my cake as I didnt feel the need for one
2.The color of the cake depends on the quality of the dates used
3.You can serve this with some honey or fresh cream with sugar as topping.
4.This cake is not very sweet so it may very well serve as a breakfast too for toddlers.
