Not whinging but I do feel like my mind has been exploding since the beginning of this week. I must admit that the intensive job searching, the sad packing-up process and heaps of uncertainty do wear me down quite a bit. Having said that, I'm usually positive! ^-^ For this coming weekend, I'm aiming to bake a couple of comfortable food to hug me. AND I SO WANT A HOME-BAKED COOKIE!!! LOL!!!

Talking about cookies... if you like the Subway type of crispy chewy dark chocolate chocolate chips cookies, I wonder if you have tried baking my Like-Subway Dark Chocolate White Chocolate Chips Cookies recipe at here?
If you are after the similar crispy chewy dark chocolate chocolate chips cookies that are made with NO egg, you should try baking THIS recipe!
These shortbread-like dark chocolate cookies are awesome!!! They are as good as the Subway chocolate cookies. They are crispy, not crunchy and little slightly chewy in the middle but slightly different because these thinner egg-free cookies are crispier at their edges!
When my son and I started munching one of these cookies, it was very difficult to stop... YUMMY!!!


Crispy Buttery Dark Chocolate Oatmeal Cookies - With NO egg
This recipe is a Must-Bake if you love dark chocolate cookies!!!

HIGHLY HIGHLY HIGHLY RECOMMENDED!

After nom nom nom countless number of cookies, my son suddenly realized that there are oats in the cookies. Then, he sounded angry and said...
"Mum, are you trying to make these cookies healthy again?"
Honestly speaking, NO!
I have added only 12g oats to make bake 18 of these cookies. Do you think that this minor addition can make these buttery cookies healthier?
This teeny tiny amount of oats is added to make these cookies slightly chewy with a subtle nutty texture and also some nice contrasting colours. This addition works out well but you can omit it if you wish! I won't.
If you are after cookies that are loaded with significant healthier amount of oats, you should try Super Yummy Chocolate Chip Oatmeal Cookies at here and Oatmeal Flaxseed / Linseed meal Chocolate Chip Cookies at here.Eventually, I didn't even bother to explain how did the oats fly into the cookies and the angry boy didn't stop munching the remaining cookies... LOL!

These thin dark chocolate cookies are sweet but not too sweet!
Crispy, buttery, chocolaty, a little chewy, VERY VERY VERY YUMMY!!!

Once we started munching this cookie, it was very difficult to stop...

Which is better? Like Subway Dark Chocolate White Chocolate Chips Cookies recipe at here vs these cookies? Both are equally nice and a little difference in their texture. And I'm happy to bake both again and again...

Here's the HIGHLY HIGHLY HIGHLY RECOMMENDED recipe that I have adapted from Epicurious
Makes 12 large or 18 medium
120g (1/2 cup) unsalted butter, soften at room temperature
100g (1/2 cup) caster sugar
1/2 tsp vanilla paste or extract
100g (2/3 cup) plain / all purpose flour
25g (1/4 cup) unsweetened cocoa powder
1/2 tsp baking powder
1/4 tsp salt
50g (1/4 cup) chocolate chips, plus more to top - I used 50g Callebaut dark chocolate callet with 54% cocoa12g (2 tbsp) old-fashioned rolled oats, optional but good to add - please read my above description.
Preheat oven to 180°C / 350°F. Line baking trays with baking paper.
Using a wooden spoon or an electric mixer with paddle attachment, beat butter and sugar for about 1-2 min until combined and fluffy. Add vanilla and beat until combined.
Combine flour, cocoa powder, baking powder and salt. Sift flour mixture into the butter mixture and use a spoon or spatula to mix until all ingredients are well incorporated. Then, stir in chocolate chips and oats.
Scoop tablespoonfuls of dough onto the prepared baking tray, about 5 cm / 2 inches apart. Use the back of a metal spoon to flatten the cookie dough slightly. Top each cookie dough with more chocolate chips if desired.
Bake for 12 mins for medium cookies and 14 mins for large cookies or until the edges of the cookies are firm. If you are baking two trays at one go, swap and rotate the position of the tray halfway through the baking so that that the cookies are baked evenly.
Allow cookies to cool slightly on the tray for about 10 mins, then transfer onto wire racks to cool completely.
Store any uneaten cookies in an airtight container at room temperature for up 5 days.
