It's almost Pancake day Tuesday the 9Th of February. My children and hubster love pancake day, it's a definitely treat day in my house, as we start with pancake breakfast like these crepe style pancakes, then in the evening we have savoury fluffy pancakes and finish with another sweet pancake! It's like Pancake city!
A crêpe style pancake is a very thin pancake usually made from flour, milk and eggs. Crêpes are especially popular throughout France, I always think of Crêpes being French pancakes.
Crêpe Suzette is a French and Belgium style crêpe with orange and sometimes even a little orange liqueur. My hubs is a huge fan of Crêpes served with sugar and lemon and my kids on the other hand prefer orange and sugar.
Did you know that February 2nd is "Le Jour Des Crêpes" also known as National Crepe Day, unfortunately I missed that one, and good thing really as not sure I could handle to Pancake days in almost a week.
If you are gluten free, then you can substitute the plain flour with buckwheat flour. Buckwheat flour is and can be used for savoury pancakes, as it gives the pancakes a better texture.
You can use a variety of pancake toppings, such as Orange and lemon like we have, or you can use some classic Nutella and bananas, fruit syrups, fruit jam, fresh cream, honey, berries....the list is endless. Let me know how you enjoy your pancakes?
In a blender add the milk, eggs, flour, salt and sugar, then blitz on high speed for about 30 seconds.
Pour the pancake batter into a bowl.
Place a shallow fry pan over medium heat and spray with a little oil, pour on a small ladle full of batter ( about 1/4 cup), then swirl around the pan.
Allow to cook until the top starts to set, then flip over to cook the other side.
The pancake should be lightly brown.
Serve immediately with a sprinkle of sugar and freshly squeezed lemon or orange juice. Happy Pancake Day!
