Creamy Vegetable Pasta Recipe for Kids

Kids can be picky about many things, but pasta is not one of them! Most kids will eat a plate of pasta without much complaint, the cheesier the better! This makes pasta a great way to get them to eat vegetables, sneaked in the pasta sauce. Today, we have a lip smacking restaurant style pasta, which combines the goodness of vegetables and provides a creamy texture without mayonnaise or any ready made sauce.

Creamy Sauce

Ingredients:

  • 4 onions, chopped
  • 2 tomatoes, chopped
  • 2-3 cloves garlic, diced
  • 1 tbsp ghee/ olive oil
  • 1 cup fresh milk cream
  • Salt
  • Black pepper powder
  • 1 tsp mixed herbs

Method:

1. Melt ghee in a pan and saute the garlic. Add the onions and saute till they turn pink.

2. Add tomatoes and cover till cooked. Add salt and black pepper powder along with the herbs and fry till cooked.

3. Once cool, grind the sauce mix and strain the pulp. To this, stir in the cream.

Stir fried Vegetables

Ingredients:

  • 1 onion sliced
  • 1 cup bell pepper, julienne (red,yellow,green)
  • 1/2 cup corns boiled
  • Few olives
  • 1 tsp olive oil
  • Salt
  • Black pepper powder

1. Heat oil in a pan and saute the onions till pink.
2. Add bell peppers and cook till slightly soft. Add sweet corn, olives and seasoning. Adjust salt since the sauce also has salt.

Assembling the Pasta

1. Boil the pasta till al dente or according to packet instructions. Drain and rinse under cold water. Drain again.

2. In a pan, mix the vegetables, pasta and sauce. Heat it just a little and toss well to mix properly.

3. Garnish with olives and a coriander sprig.

Your creamy pasta is ready! This recipe is guaranteed to be an absolute hit with the kids, and also makes a great lunchbox recipe. If serving for adults, add some garlic bread and soup for a complete meal. Enjoy!
