Ingredients
2 lbs brussels sprouts, rinsed and cut in half (remove part of the stem, too if it's extra long)
1 tbsp olive oil
2 tbsp balsamic vinegar
1/4 c each crumbled blue cheese, pecan halves, and dried cranberries
1/2 tsp each salt + pepper
DirectionsPreheat oven to 375 degreesLine baking sheet with foil and spray with non-stick cooking sprayAdd brussels sprouts, olive oil, and salt and pepper -- coat sprouts well using your handsBake for 25-30 minutes or until lightly goldenAdd balsamic vinegar, coating well Add blue cheese, pecan halves, and dried cranberriesBake an additional 10 - 15 minutes until cheese is melted and pecans are toasted
Serve with roasted or grilled chicken for the perfect, fancy-pants dinner. Enjoy!
