Cranberry Chutney

I love the festive season as you can buy fresh cranberries at your local supermarket, and making homemade cranberry chutney is such a great feeling, as it means that Christmas is approaching.

Lightly spiced cranberry chutney always gives me the festive feeling, adding to sandwiches, salads, and cheese boards giving a little extra sweet, spice and tange! With it only taking about 25 minutes to make and easy peasy why would you buy it when you can make it fresh!

Ingredients:
1/2 Tbsp Oil
1 Red Onion
1 Tsp Ground Ginger
1 Tsp Peppercorn
5-6 Cloves
1/2 Cinnamon Stick
100ml Apple Cider Vinegar
300g Fresh Cranberries

Heat oil and add chopped red onion to the pan over medium heat.

Add ground ginger, peppercorns, cloves and cinnamon and stir for about a minute.

Add sugar and vinegar to the pan, and heat and stir until the sugar has melted.

Finally add the fresh cranberries to stir well, bring to the boil.

Simmer covered for about 15 minutes

The mixture will have thickened and turn off the heat

Spoon into to a sterilised jar ready for use once cooled. Enjoy
