Cranberry-butterscotch Scones (Egg-less)

By Harini
I am into baking again :)I was away from my oven for quiet sometime and was missing it badly, now I am back with my oven and very happy about it.I was looking for something new to bake other than cakes and cookies and found this interesting recipe for egg less scone in a recent issue of Femina(magazine). Before this I have never heard about a scone and did a little reading about it. According to wiki,a scone is a single serving cake or quick bread made with baking powder and glazed if needed.Scones are traditionally made as triangles The recipe I referred was very simple and straight forward and I am quite happy with the scones I made :). I did make a few changes to the recipe which I have mentioned in the notes. Please try and let me know your thoughts and comments

Cranberry butter scotch scones-From the magazine Femina
Star ingredients-All purpose flour, dried cranberries and butter scotch chips
Time-10 minutes+20 minutes
Yield-8 large scones

Ingredients:
200 grams all purpose flour/maida
100 grams unsalted butter chilled
1/2 cup dried cranberries
1/2 cup butter scotch chips
1/2 cup sugar
2 tablespoons badam mix (brand of choice)
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
Method:
1.In a large mixing bowl sift all purpose flour along with salt and baking powder.Add sugar, badam mix and combine.
2.Cut the chilled butter into small cubes and add to the flour mix. Mix the butter with flour using your finger tips.Continue till the mixture resembles bread crumbs.

3.Now add cranberries and butterscotch chips and mix well.Start adding milk little by little and form a dough. The dough should come together quickly and not very stiff.Use as little milk as required.

4.In  a large cookie sheet (I used a pizza pan) spread the dough and form a circle of 1 inch height.Cut the dough into 8 triangles using a sharp knife.

5.Bake in a preheated oven for 25 minutes at 200C.Serve warm.

Notes:
1.I used MTR badam feast instead of vanilla metioned in the recipe. I think even saffron or cinnamon will be great.
2.I just wanted to finish off the butter scotch chips so used it here.It is optional or you can replace with chocolate chips or any other nuts.
3.I did not use any glazing as in traditional scones.
