Coriander Pulao

One pot meals are close to my heart,they are quick to make,filling, tastes great even when cool so good for lunch box and colorful-kids friendly.Even fussy kids who do not eat veggies will be attracted towards pulao varieties,and you can sneak as many veggies as you want when you make pulao for kids.Recently I have started to make all my pulao in pressure pan.Making pulao in pressure pan is much easier than I thought.I was shying away from making pulao in pressure pan as once or twice I did not get it right in the past and I would take the long route of cooking the rice first and mixing up.But now I have figured out the way and my pulaos get ready in a jiffy these days :). Since I make these dishes quite often,I keep changing the spices and base to create new flavor every time.For instance this coriander pulao is a make over I gave for our humble coriander rice,we often make at home,it turned out very flavorful and tasty,try it out to know what I mean :)
Coriander pulao recipe
Star ingredients:Basmati rice&cilantro leaves
Time:30 minutes
Serves:3

Ingredients:
1 1/4 cup basmati rice
1/4 cup green peas
2 carrots peeled and chopped
1 onion sliced
1/4 green bell pepper chopped
2 cloves,cardamom
Salt
Grind to a smooth paste:
2 teaspoons channa dal
1 teaspoon cumin seeds
1/2 teaspoon black pepper corn
3 dried red chillies
2 teaspoons oil
1/2 cup cilantro leaves
Fry all the ingredients except cilantro leaves in 2 teaspoon oil and grind to a smooth paste along with cilantro leaves.
Method:
1.Soak basmati rice in water for 30 minutes.
2.Heat a pressure pan and add two teaspoons oil.Temper with cloves,cardamom.
3.Add onions and saute till translucent.Add peas and saute for 2 minutes.
4.Add the ground paste and saute well for 5 minutes till aroma wafts out.
5.Drain the basmati rice and add to the sauteed veggies,Saute well for 5 more minutes.
6.Add 3 cups of water,salt and mix well.Pressure cook up to 3 whistles.
7.Serve hot with raita and papads
Notes:
1.Key for good pressure cooker pulao is water level.Water should be just above the  veggi-rice mixture.
2.You can add some ghee after cooking,while serving.
