I LOVE Chipotle! (then again, who doesn’t?) There’s nothing more satisfying than taking restaurant inspired dishes and recreating them at home. Then, you can have them whenever you want! My favorite topping at Chipotle is their spicy corn salsa, so I knew I had to make it at home. This corn salsa is so super simple and delish, you’ll be making it as a topping/side dish/snack for any reason. Trust me.
1/4 cup finely diced red onion
1 jalapeno, seeded and finely diced
1/3 cup fresh cilantro, chopped
Juice of 1 lime
salt and pepper to taste
Combine all the ingredients, then season with salt and pepper to taste. Refrigerate until ready to serve. You can serve this with tacos, burritos, fajitas, burrito bowls, salads, as a side dish, the possibilities are endless!
Leftovers are great for making Chicken Tortilla Soup.
