Egg and jam open faced sandwich (my new comfort food) with bing cherries (which looked delicious but were sadly flavorless, guess I need to wait a bit longer to get good ones), accompanied by a ginormous cucumber, tomato, mozzarella, and spinach salad sprinkled with kosher salt and topped with balsamic glaze. Just what I was in the mood for and super refreshing!
I also tried out the grating feature on the food processor tonight with the rest of the mozzarella (mixed results so I think I'm going to try freezing my other package before grating so I get more 'string-like' pieces and hopefully that will work better), and made some rhubarb compote for yogurt topping tomorrow!
