I just bought coconut milk for the first time last week! I know, late to the party on that ingredient. I made Thai chicken kabobs (still have to post the recipe for that!) But I had over half the can leftover and wasn’t sure what to do with it.
I did a quick Google search and coconut milk pancakes came up! I made a batch – and these were the best pancakes I’ve ever had! I had 2 pancakes for breakfast every day last week topped with banana and chia seeds. SO GOOD! The calories differ for coconut milk. The one I used was this one:
When I originally figured out the calories on www.caloriecount.com it came in at 195 calories PER pancake!! But the coconut milk they had on there was a lot more calories. These come in at 130 calories per pancake.

Ingredients
- Combine 4.5 ounces (1 cup) all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt.
Instructions
- Whisk together 1 cup light coconut milk, 1½ tablespoons canola oil, and 1 egg; combine with dry ingredients. Cook as usual for pancakes.
