Coconut Milk Chocolate Smoothie with Coconut Whipped Cream

I have been into coconut and coconut milk lately. Not to even talk about coconut yoghurt, which currently is one of my faves. That’s why I wanted to try a smoothie made out of coconut yoghurt. And guess what?! It’s delicious!

Of course I just had to put some chocolate into it. I was trying to keep it as healthy as I could by using dark chocolate. If you think that I have hard time trying to lessen my chocolate habit after the holiday season, you are correct.

Then I found this smooth and melt-in-your-mouth velvet called whipped coconut milk. It is delish! Once you try it you cannot go back…

Coconut Milk Chocolate Smoothie with Coconut Whipped Cream

Serves: 2
Preparation time: 15 minutes

Ingredients:
1/2 cup Natural Coconut Milk Yoghurt (COYO Coconut Milk Yoghurt)
1/2 cup Coconut Milk Drink (Alpro Coconut Original)
1 Whole Banana
3 tsp Cocoa (Green & Black’s Organic Cocoa)
1 cup Ice Cubes
5 pieces or 17.5 gr Dark Chocolate (Green & Black’s Organic Dark 70% Chocolate)
1 can (400 ml) Coconut Milk
1 tbsp Vanilla Sugar

Directions:
To prepare the Coconut Whipped Cream:
Place the can of coconut milk in the refrigerator overnight. Be careful not to shake it when you take it out. Carefully with a spoon separate the thick cream from the more liquid coconut milk. Disregard the liquid coconut milk and only use the thick cream. In a medium bowl whip the coconut milk with vanilla sugar until it’s fluffy. You can store the Coconut Whipped Cream in the fridge overnight.

To prepare the Coconut Milk Chocolate Smoothie:
With a sharp knife or vegetable peeler shave 4 pieces of dark chocolate. Set aside. Shave the remaining 1 piece of dark chocolate separately. Set aside. Peel the banana and chop it into medium pieces. In a blender mix coconut milk yoghurt, coconut milk drink, banana, cocoa and ice until smooth. Add the shaved 4 pieces of chocolate into the smoothie and blend. Pour into 2 tall glasses. Top with Coconut Whipped Cream and sprinkle shaved dark chocolate on top. Serve immediately.
