Clean Cottage Cheesecakes with Strawberry Topping

Anyone else love cheesecake? It's my weakness (among MANY others). So after seeing some cheesecakes made with cottage cheese, I just had to give it a try.After searching for something low calorie, high protein and clean, I wasn't having much luck.Ergo my own take on the cottage cheese cheesecake. Plus these are personal size, making for the perfect little snack under 100 calories!Crust:1 cup almond flour2 Tbsp butter, melted1-1 1/2 tsp stevia (or preferred sweetener)Preheat oven to 350 degrees. Mix ingredients in a small bowl. Press into cupcake liners and bake for 10 min. Let cool.Cheesecake:3/4 cup low fat/nonfat cottage cheese2/3 cup low fat/nonfat greek yogurt (plain, lemon or vanilla works best)1 Tbsp oat flour2 Tbsp pure maple syrup1/4 tsp salt4 egg whites or 2 whole eggsjuice from 1/2 lemon (omit if you are using lemon flavoured yogurt)Place all of the ingredients except eggs into blender. Blend until combined. Add eggs and blend for a second or two. Pour batter into prepared crusts.Bake at 350 degrees for 25-30 min.Top with fresh strawberries or strawberry topping.Strawberry Topping:2 cup whole strawberries1 Tbsp maple syrup or agave syrupBlend strawberries with syrup until smooth. Top your cheesecake and enjoy.These suckers are so tasty, even my kids were asking for more. Have fun!!
