Cinco De Mayo Treats!

Happy Cinco de Mayo! Here are a few fun recipes to help you celebrate the 5th of May. I realize most are of the cocktail variety… call me slightly biased.

A week that starts with tequila is a week… well good luck with that.  Enjoy!

Lasagna Corn Carne
Ingredients:
1 pound ground beef
1 jar (16 ounces) salsa
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-3/4 ounces) cream-style corn
1 large onion, chopped
1 medium green pepper, chopped
1 celery rib, chopped
3 garlic cloves, minced
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon salt
1 teaspoon chili powder
12 lasagna noodles, cooked and drained
2 cups (8 ounces) shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese

Directions
In a large skillet, cook beef over medium heat until no longer pink;
drain. Add the salsa, beans, vegetables, garlic and seasonings.
Bring to a boil. Reduce heat; cover and simmer for 15 minutes.
Spread a fourth of the meat sauce in a greased 13-in. x 9-in. baking
dish; top with four noodles. Repeat layers once. Layer with half of
the remaining sauce; sprinkle with half of the cheeses. Layer with
the remaining noodles, sauce and cheeses.
Cover and bake at 350° for 30 minutes. Uncover; bake 15-20 minutes longer or until heated through. Let stand for 15 minutes before cutting. Yield: 12 servings.

Nutritional Facts: 1 piece equals 313 calories, 10 g fat (5 g saturated fat), 42 mg cholesterol, 690 mg sodium, 35 g carbohydrate, 5 g fiber, 19 g protein.

Ingredients:
1/4 cup sugar
1 teaspoon ground cinnamon
10 lime wedges
3 cups Triple Sec or other orange liqueur
2 cups tequila
1 1/2 cups freshly squeezed lime juice
1 cup superfine sugar or powdered sugar
2 cups pineapple juice
Ice cubes
Cinnamon sticks (optional)
Directions
In a small bowl mix sugar and cinnamon until combined. Place sugar mixture on a small plate. Rub rims of eight glasses with lime; dip rims in sugar mixture.
In a pitcher combine Triple Sec, tequila, lime juice, and sugar. Stir until sugar is dissolved. Add pineapple juice to tequila mixture and stir. Chill until ready to serve.
Place ice cubes in sugar-rimmed glasses. Pour tequila mixture into prepared glasses and garnish with cinnamon sticks, if desired.

Cilantro Jalapeno Margarita
Ingredients:
2 teaspoons sugar
1/4 teaspoon chili powder
1/2 ounce simple syrup
1 ounce Cointreau
2 ounces tequila
1 lime – juiced
1 jalapeno – halved, seeded
handful fresh cilantro
1 lime – quartered
What To Do:

Place sugar and chili powder into a small shallow dish. Dip glass into simple syrup and then into sugar to create rim. Set aside.
Fill margarita glass with ice.
Into a shaker add simple syrup, Cointreau, tequila and lime juice. Shake to combine. Strain into glass.
Add jalapeno, cilantro and lime wedges.

Chocolate Margarita

Ingredients:
1 ¾ oz silver tequila
1 ½ oz orange liqueur
1 oz Kahlua
1 oz half n half
1 ½ TBS chocolate syrup
ice
Oreo cookies

Directions:
Place Oreo cookies in a sandwich bag and crush. Place crushed Oreo on a small plate. Combine liquid ingredients in a cocktail shaker and stir in chocolate syrup. Add ice into shaker and shake well. Moisten cocktail glass lightly and rim with crushed Oreo. Pour into rimmed glass and enjoy.

Tequila Sunrise Margarita

Ingredients
Red colored sugar
1 lime wedge
3 cups Triple Sec or other orange liqueur
2 cups tequila
1 1/2 cups freshly squeezed lime juice
1 cup superfine sugar or powdered sugar
2 cups orange juice
Ice cubes
Grenadine syrup
orange slices (optional)

Directions
Place sugar on a small plate. Rub rims of glasses with the lime wedge. Dip rims of glasses in sugar to coat; set aside.
In a pitcher combine Triple Sec, tequila, lime juice, and sugar. Stir until sugar is dissolved. Stir in orange juice. Chill until ready to serve.
Place ice cubes in sugar-rimmed glasses. Pour tequila mixture over ice cubes and add 2 dashes grenadine syrup to each glass. Garnish with orange slices, if desired.

Thai Steak Tacos
Ingredients
1/4 cup(s) low-sodium soy sauce
1/4 cup(s) rice wine vinegar
2 tablespoon(s) honey
1 tablespoon(s) fish sauce
1 tablespoon(s) chili garlic paste
1 teaspoon(s) toasted sesame oil
Zest and juice of 1 lime
1 pound(s) boneless New York strip steak, cut into 1/4-inch strips
1/2 cup(s) mayonnaise
1 tablespoon(s) (or up to 2 tablespoons) Asian hot sauce, such as Sriracha
1 cup(s) shredded green cabbage
1 medium (about 1/2 cup) carrot, shredded
6 (about 1/2 cup) radishes, thinly sliced
8 corn tortillas
1 tablespoon(s) olive oil
1/4 cup(s) fresh cilantro leaves
1 tablespoon(s) sesame seeds, toasted
Directions
In a medium bowl, whisk together soy sauce, vinegar, honey, fish sauce, chili garlic paste, sesame oil, and lime juice and zest. Place steak in a 2-gallon resealable plastic bag and pour in marinade. Refrigerate for at least 3 and up to 6 hours.
In a small bowl, combine mayonnaise and hot sauce. Set aside. In a medium bowl, toss together cabbage, carrot, and radishes. Set vegetables aside.
In a large nonstick skillet over medium-high heat, warm 2 or 3 tortillas at a time, about 1 minute per side. Transfer to a plate and cover with a clean dish towel. Increase heat to high and heat olive oil in same skillet. Add steak, discarding marinade, and cook until seared, stirring, 3 to 5 minutes.
To assemble tacos, divide steak among 8 slightly warmed tortillas. Top with reserved vegetables and sauce, and sprinkle with cilantro and sesame seeds.

Corn and Black Bean Salsa

Ingredients:
2 cans (15-1/4 ounces each) whole kernel corn, drained
2 cans (15 ounces each) black beans, rinsed and drained
8 plum tomatoes, seeded and chopped
1 medium red onion, chopped
3/4 cup minced fresh cilantro
4 jalapeno peppers, seeded and chopped
1/4 cup lime juice
1/2 teaspoon salt
Tortilla chips
Directions
In a very large bowl, combine the first eight ingredients. Cover and
refrigerate until serving. Serve with tortilla chips. Yield: 11
cups.

Ingredients:
Watermelon cubes, (if desired)
Kosher salt
10 lime wedges
3 cups Triple Sec or other orange liqueur
2 cups tequila
1 1/2 cups freshly squeezed lime juice
1 cup superfine sugar or powdered sugar
5 cups seedless watermelon, chopped
Directions
If desired, freeze cubes of watermelon on a waxed paper-lined tray for 1 to 2 hours or until firm.
Place salt on a small plate. Rub rims of eight glasses with one of the lime wedges. Dip rims of glasses in salt to coat; set aside.
In a pitcher combine Triple Sec, tequila, lime juice, and sugar. Stir until sugar is dissolved.
Pour 1/4 cup of tequila mixture into blender or food processor with chopped watermelon (working in batches if necessary). Cover and blend or process until smooth. Strain through a fine-mesh sieve. Combine watermelon juice with remaining tequila mixture. Stir. Chill until ready to serve.
Place frozen watermelon cubes, if using, in salt-rimmed glasses. Pour tequila mixture over watermelon cubes. Garnish with remaining lime.
