Chocolate-dates Whole Wheat muffins(Egg Less)

Muffins have lately become my daughter's favorite :). She is fascinated seeing the whole process of mixing,pouring and baking and when I tell her I am making muffins for her,she amuses me by even keeping quiet and letting me do the work(not more than 15 minutes anyways huh). Thankfully putting together a muffin also takes not more than 15 minutes,so I am able to make something tasty and also healthy(when I include some fruits,nuts and whole wheat) as an evening snack for her.Even I am happy because I get to try something different and blog here :). So when I saw a pack of dates in my refrigerator I wanted to make muffins and I also added a spoon of cocoa powder just for a change.Some almonds for added crunch and there you go with a very soft,moist and exotic treat for your kids and yourself.Try this and I am sure your kids will be pleased :)

Chocolate dates whole wheat muffins recipeStar ingredient:whole wheat and dates
Time:15+15 minutes
Yield:15 muffins
Ingredients:
125 grams whole wheat flour
30 grams molten butter
30 grams sugar
10-12 pitted dates chopped fine
10-12 almonds crushed
50 ml milk
2 teaspoons baking powder
1/2 tablespoon unsweetened cocoa powder
Vanilla 
A pinch of salt
Method:
1.Place sugar and butter in a large mixing bowl and beat until creamy and fluffy.Add the milk and mix well.Add vanilla and incorporate well.
2.Sift salt.whole wheat and baking powder and to the milk mixture.Add cocoa powder and whisk just till everything comes together.
3.Fold in dates and almonds and mix once or twice.
4.Preheat oven at 190C and prepare a muffin tin by greasing and dusting.Place the liners in each hole and fill with batter up to 3/4th level.
5.Bake for 15-17 minutes.Allow to cool for 10 minutes.
6.Serve warm.
Notes:
1.You can substitue walnuts instead of almonds
2.Instead of vanilla you can add cinnamon.
3.Do not over beat the batter after adding dates.
