Chocolate Chip Cookies Soft and Crisp and Best

Don't judge me.I love chocolate chip cookies. I like them ,really. But I don't enjoy them too dry and crisp. They should be just right . A little crisp and a little soft . Not so crisp that they are dry and not so soft that they taste doughy and undercooked. Just right.And I'm those weird people who love a wee bit of salt in their chocolate chip cookies.That makes it all the more awesome.These cookies can be flattened to be , well, flat. But I wanted thick cookies.They're super easy to make and take all off 10-15 minutes to bake. You can use chocolate chips but I used chunks. I feel that theChips would get lost in the cookie dough .

You need
120 gms butter3/4 cup granulated -better ground sugar1 tbsp honey 3/4 cup chocolate chips or chopped chocolate chunks 1 egg or 2 tbsp yogurt(if you want egg less)1 tsp vanilla extract 1 1/2 cups plus extra all purpose flour or maida1\4 tsp baking powder 1\8 tsp sea salt -optional 
Preheat the oven to 180C abd line two cookie sheets with parchment paper. Start with the butter. Microwave or melt it on the stovetop to this gorgeous color.40 -50 seconds are good. Add the sugar and the golden syrup or honey. This is honey. A little crystallized.
I began whisking, but gave into the electric beater. Whisked to get the butter and sugar almost combined. They cannot become buttercream like pale. Remember that before you beat this like crazy.
Add in the egg and vanilla extract. 15 seconds and you're done. If you're not interested in using eggs , by all means add 2 tbsp thick yogurt. 15 seconds ,thats all you need to whisk.
Add the baking powder, sea salt and  11/2 cups of flour . Mix .
Add the chocolate chunks. You may need a lil more flour to get the dough together.
Now bring the dough together and make the cookie balls. I made 14. 13 cookies with the 60 mils ice cream scoop. But I'm not too fond of that number.
Flatten the tops a little. And bake exactly 11 minutes in the middle of the oven. Turn the tray around and bake another 3 minutes.
Bring the cookies out and allow to cool on a wire rack. 30 minutes, if you can wait...For the most awesome cookies ever. The base is crisp. And the sides firm up well. And the inside...as yummy as possible.
Take my word for this. You'll never buy factory made chunky chocolate chip cookies with no character ever. These are impossible to let go of.
