Chipotle Feta Hummus

I still remember the first time I made this Chipotle Feta Hummus. I made it for my then-boyfriend, now husband, and he absolutely loved it. So I figured I’d make a batch for my brother and my dad for a visit we were having with them when we all still lived in Michigan. I brought a big bowl of it for a football game and told my dad I made chipotle feta hummus and he looked at me like I had four heads. He ended up trying it even though he thought I was a weirdo and absolutely loved it, and nowadays he makes his own hummus!

I make my hummus in a food processor, but you can also make it in a blender or even in a mini processor if that’s what you have. The best advice I can give you when making hummus (or anything at all) is to taste, taste, taste! Blend it all up and dip a cracker and add more of what you think is missing. I like my hummus with extra lemon juice and a few pinches of cayenne pepper. You might prefer something totally different so don’t be scared to taste it while you make it and then make it your own.

Ingredients

2 15oz. cans chickpeas – drained
2 Tbsp. garlic – chopped
1/3 cup Tahini paste
2 chipotle peppers
2 Tbsp. adobo sauce
3 oz. feta cheese
1 tsp. cayenne pepper
Juice from 1 lemon
Salt
Black pepper

Chipotle Feta Hummus Recipe

Drain the chickpeas and pour them into a large bowl.

Add your chopped chipotle peppers, Tahini, lemon juice, garlic, and adobo sauce.

Toss in your feta cheese.

Stir everything together and pour into a food processor. Add salt, pepper, and cayenne as needed after blending and tasting.

I usually serve this hummus with crackers and some chopped veggies.
